  • Add one chopped onion, three carrots, and three celery stalks. Sautee for 10 minutes.
  • Mix 10 cups of water, 15 oz tomatoes, 6-ounce tomato paste, two tsp soy sauce, two tsp lemon juice, one tsp garlic granules, half tsp salt, one cup lentils, and fresh pepper to taste. Mix well.
  • Add the collard greens. Bring it to medium heat and allow simmering for 30 minutes.
  • Add ¼ cup uncooked quinoa.
  • Simmer for 20 minutes.

  • In a stockpot, mix the cabbage with three cups of water. Then, add the celery and tomatoes. Finally, add the green peppers and onions.
  • Heat the soup until it boils. Once veggies are cooked, reduce the heat and allow the soup to simmer for 50 minutes.
  • Mix well and serve immediately.
  • You may also refrigerate the excess soup for five days.
